Fun Food for Kids

Baked Apple Pie Enchiladas.  They give you all the cinnamony goodness of hot apple pie stuffed securely into a tortilla and drizzled with caramel sauce...
She also has a great story for you!

What you need:

  • Homemade apple pie filling or 1 (21 ounce) can apple pie filling
  • 6 (8 inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

How to do it:

  1. Preheat oven to 350°F.
  2. Butter a 9 x 13 inch baking dish.
  3. Soften the tortillas in the microwave if needed to make them easier to roll.
  4. Spoon about one heaping 1/4 cup of pie filling slightly off the center of each tortilla, sprinkle evenly with cinnamon.
  5. Roll tortillas up and place seam side down in a greased baking dish.
  6. In a medium saucepan bring butter, white sugar, brown sugar and water to a boil.
  7. Reduce heat and simmer for 3 minutes, stirring constantly.
  8. Pour sauce over enchiladas, sprinkle with extra cinnamon on top if desired and let stand 45 minutes.
  9. Bake in preheated oven 20 minutes, or until golden.
  10. Serve warm with vanilla ice cream, or whipped cream and top with desired amount of caramel sauce.

Fun Food for Kids with Miss Eileen: Jellyfish Sandwiches

In August along with reading you a very silly story, Miss Eileen will show you how to make your own Jellyfish Sandwiches!  Jellyfish are not needed!

You'll need a Super-Special Grown Up and:

  • 2 bread slices
  • jelly
  • banana slices
  • blueberries
  • string cheese
Here's how it works:
Using scissors, cut bread slices into jellyfish shapes by creating a scalloped edge or an oval. 
Spread jelly between the slices and place them together to form a sandwich. 
Pull apart string cheese and arrange it underneath the sandwiches to resemble jellyfish tentacles.
Use banana slices and blueberries for the eyes. 



Fun Food for Kids with Miss Eileen: Easy S'mores Dip

In July along with reading you a cool story, she will show you how to make your own Easy S'mores Dip!

You'll need a Super-Special Grown Up and:

  • 8 oz. cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 cup fudge sauce
  • 7 1/2 oz. marshmallow cream
  • 1 tsp vanilla extract
  • Graham cracker sticks
  • Mini chocolate chips
  • Marshmallow bits
Here's how it works:
Blend the cream cheese, powdered sugar, fudge sauce, marshmallow cream, and vanilla until smooth.  Top with mini chocolate chips and marshmallow bits.  Use the graham cracker sticks for dipping!  Enjoy! 


Fun Food for Kids with Miss Eileen: Strawberry Brownie on a Stick!

This month, in addition to a great story, she will show you how to make a Straw-Brownie Kabob!

You'll need a Super-Special Grown Up and:

  • Ingredients
  • Strawberries
  • Brownie Bites
  • Large Marshmallows
  • Chocolate, melted
  • Wooden Skewers
Here's how it works:
Use wooden skewers and place a strawberry, brownie, marshmallow, brownie, and finish with a strawberry. Drizzle melted chocolate on top. 





Fun Food for Kids with Miss Eileen: Marshmallow Flower Cupcakes!

This month she will help you make cupcakes that look as good as they taste AND tell you a great story!

You'll need a super-special grownup and

  • a cupcake
  • colored sugars
  • small marshmallows
  • icing

Here is what you'll do:

  • ice the cupcake
  • cut the marshmallows in half, diagonally
  • dip the marshmallows in colored sugar
  • place the marshmallows on the iced cupcake in a circle, starting from the outer edge and moving toward the middle


Fun Food for Kids with Miss Eileen: Strawberry Bunny Sundae!

You will need these ingredients: 

  • Little Debbie Snow Ball Cakes
  • Pound cake, cut in cubes
  • Strawberries, sliced
  • Small and large marshmallows
  • Strawberry JELLO
  • Cool Whip
  • Clear sundae cup
  • Mini chocolate chips
  • Pink sugar

Here is how it is done:

  • Place small amount of strawberry Jello in the bottom of clear sundae cup. Add a couple of small marshmallows to the Jello.
  • Place in refrigerator to set. Once the Jello is set, place sliced strawberries on the side of the clear sundae cup.  
  • Add cubed pound cake along with spoonfuls of Cool Whip. 
  • Place Little Debbie Snowball Cake on top. 
  • Add two chocolate chips for the eyes. 
  • Cut a large marshmallow in half and dip in pink sprinkles for bunny ears. 
  • Place marshmallow ears on Little Debbie Cake with Cool Whip.


Fun Food for Kids 2021 Season Premiere: Dog Sandwiches!

Ingredients:
2 slices whole wheat bread
2 slices American cheese
1 slice provolone cheese
1 blueberry
2 candy eyeballs
a 3 inch heart-shaped cookie cutter

What to do:
Cut the whole wheat bread, American cheese and provolone cheese into a heart shape, using the cookie cutter.  Place the American cheese in between the two slices of whole wheat bread. Cut the provolone cheese in half, length-wise, for the dog's ears, placing one half to the left and one half to the right of the sandwich.  Add the blueberry for the nose and the candy eyeballs for the eyes.  WOOF!  WOOF!
